Aam Panna

Aam Panna 

  

 

 It is a summer drink made from green raw mangoes pulp, which is extracted after roasting or boiling the mangoes.They are tempting in taste and a healthy cool drink in summers.There are a lot of drinks and dishes prepared with raw and ripe mangoes in summers.  

 



Serves : 2

Main Ingredients : Raw Mangoes

Time : 10 minutes

Difficulty : Easy



Ingredients :

  • 2 medium sized raw mangoes
  • 3/4 cup sugar
  • Salt 
  • Water
  • 1/2 tbsp cumin powder
  • Mint leaves
  • Black salt
  • Ice crushed

Method :

  • First take a pan put water and raw mangoes in it and boil it for 8-10 minutes. Let it cool and then peel the mangoes.
  • Remove the pulp with the help of a spoon and put it in a jar and grind it along with water. 
  • Now take a pan and put the pulp mixture with sugar and let it cook till the sugar dissolves.
  • Keep stiring it till the sugar dissolves completely.Now remove it from fire and add cumin powder , black salt and salt in it. 
  • After this keep it in the refrigerator. After it gets chilled take serving glasses and transfer the drink in serving glasses with ice cubes and garnish it with chopped mint leaves.Your Aam Panna is ready to serve. Serve it chilled. 

Paneer Bhurji

Paneer Bhurji is another variation of Paneer recipe .It is a quick, easy and a tasty to prepare dish at home.Its is similar to egg burji but instead of eggs , Paneer is used in the recipe. I learned it from one of my punjabi friend in hostel... This was the ultimate way for us to use paneer in those days, as it used to take only few minutes to cook. Once during our college fest we had organised a stall , in which me and my friend had prepared this , it was liked by many of the students and lecturers... It became a big hit ... Today I would like to share the same dish with you all. Following are the ingredients ...

Main Ingredients : Paneer

Time : 10 minutes

Difficulty : Simple

 

 

Ingredients :


  • 250 gms fresh Paneer
  • 2 onions
  • 5-6 Green Chillies
  • 1 tbsp Jeera/Jeera powder
  • 1/2 tbsp Turmeric powder
  • Green Capsicum
  • Red Capsicum
  • Yellow Capsicum
  • Salt
  • Coriander leaves
  • Oil

Method :


  • Take the Cottage Cheese ( Paneer ) and cut the paneer in cubes and keep it aside.
  • Now take a pan heat oil in it and fry the cubes properly till they turn slightly brown in color.
  • Now immediately put the fried paneer in cold water, squeeze and keep it aside, as this helps in giving the paneer softness.After this mash the paneer with soft hands.
  • Meanwhile take a pan add 2 tbsp of cooking oil and add jeera in it, as it crackles add green,yellow,red capsicums with chopped green chillies saute for few minutes .
  • Then add salt and turmeric powder to it, as soon it softs, put the mashed paneer in it, and cook for 2-3 mins. 
  • Garnish with chopped coriander leaves at the end and serve it hot with rotis, parathas etc.

Crisp Chilli Potatoes

Crisp Chilli Potatoes

 

 

Chilli potatoes are very delicious and spicy in tastes and goes very well in evening snacks. It is mostly loved by children. Everyone loves to eat Chinese. My daughter loves to take these potatoes in her tiffin to school. It can even go well with fried rice and noodles.Here is the recipe for this dish.

 

 



 

 

Serves : 4

Main Ingredient : Potato

Time : 25 mins

Difficulty : Average

 

 

Ingredients :

  • 3-4 Potatoes ( big )
  • 1/4 tbsp cornflour 
  • 1/2 tbsp Chilli Sauce
  • 1/2 tbsp Soya Sauce
  • 1/2 Tomato Ketchup 
  • 1/2 tbsp green chillies ( chopped )
  • 1/2 tbsp garlic sauce
  • Salt
  • Sugar
  • Cooking Oil


Method :


  • First peel the Potatoes and make its thin slices. 
  • Now take a pan add water in it par boil the sliced potatoes by adding salt in it.
  • Now drain the water and dry the sliced potatoes.
  • This helps in making the potatoes crisp while frying. 
  • Now take an another pan add cooking oil in it and deep fry these sliced potatoes once it dries up. 
  • Meanwhile take a bowl mix the cornflour with water and make a thin paste.
  • Now take a sauce pan and add oil in it, to this add all the sauces, and add the cornflour paste in it.
  • When it starts boiling add a pinch of sugar.
  • Once cooked mix the fried potatoes in it and transfer it in a serving plate and serve hot.
  • Your chilli potatoes are ready to serve ... :)

Vegetable Raita

Main Ingredient :Veggies/Curd

Time : 10 mins

Difficulty : Easy



Ingredients :

  • 5 cups fresh Curd
  • 1/4 Red Capsicum  ( small cubed )
  • 1/4 Yellow Capsicum ( small cubed )
  • 1/4 Green Capsicum ( small cubed )
  • 1/2 Tomato  ( small cubed )
  • 1/2 Cucumber  ( small cubed )
  • 1 medium size Onion ( small cubed )
  • Red Chili powder
  • Jeera powder
  • Salt to taste
  • Black Pepper
  • Coriander Leaves
  • Green Chillies
  • Sugar

Method :

  • Take a clean bowl and whisk the curd in it till it turn smooth enough.  
  • Add the red chilli powder, jeera powder, salt and black pepper and mix it well with the curd.
  • Now add all the vegetables and chopped coriander leaves in it and again mix it properly. Add more salt if required.
  • Add a pinch of sugar.
  • Transfer it into a serving bowl and garnish it with fresh coriander leaves. 
  • Refrigerate and serve it cool with your meal.

Boondi Raita

Serves : 4

Main Ingredients : Curd / Boondi

Time : 10 minutes

Difficulty : Easy



Ingredients :

  • 75 grams Boondi
  • 2 cup fresh curd
  • 1/2 tbsp Jeera ( roasted and crushed )
  • Red chili powder 
  • Coriander leaves
  • Salt   

Method :

  • First take a clean bowl and whisk the fresh curd till it turns soft and smooth. 
  • Now add the Boondi, roasted heera powder, red chili powder, chopped coriander leaves  and salt to it and mix it well all together and refrigerate it and serve it chilled with the meal.


Note : Before serving check that the Boondi turns soft .
           Use chill curd ...


Alloo Raita

I mostly prepare this refreshing recipe with Pulao.Alloo raita is mostly served in summers. It even goes well with paranthas .Now lets learn how to make this nutritious Alloo ka raita ...

Main Ingredient : Alloo & Curd

Time : 10 mins

Difficulty : Easy



Ingredients :

  • 2 medium sized boiled Potatoes.
  • 2 cup fresh curd 
  • 2-3 dry red chili fakes ( crushed )
  • Black pepper ( crushed )
  • 1/2 tbsp Jeera ( roasted and crushed )
  • Salt to taste
  • 3-4 Bay leaves
  • Coriander leaves

Method :



  • First peel the boil potatoes and cut them in cubes and keep it aside.
  • Now take a clean bowl and beat the fresh curd.
  • Now add the boiled cubed potatoes in it.
  • After that add the bay leaves, crushed red chili flakes, black pepper and the roasted jeera powder.
  • Add salt in it according to your taste. 
  • Mix it well with chopped coriander leaves.
  • Break the dry chili flakes and garnish it on top. Your Alloo ka raita is ready.
  • Serve it cool, and enjoy with your meal... :)

Pineapple Raita

This delicious fruit has a lot of healthy nutrients.It contains a good amount of fiber. It is eaten raw or in form of vegetable or juices. I was once invited by my close family friend for dinner. My friend shes a great cook, and she had prepared this pineapple raita especially for us. She wanted to give it a twist from the regular raitas.Everyone loved having it. I have learned this recipe from her. Thanks for teaching me, as now I am able to share this with other foodies all over the world... :)

You too should try this out ... Its not a miss... Its taste worthy... :)





Serves : 4

Main Ingredients : Pineapple

Time : 20 mins

Difficulty : Easy

 

Ingredients :

  • 2 cups fresh yogurt 
  • 1 fresh pineapple
  • Red chili powder ( a pinch )
  • Jeera Powder ( a pinch )
  • Salt to taste
  • Coriander leaves
  • Pomegranate 

Method :

  • First cut the edges and peel the pineapple properly and cut the pineapple into two equal halves. First half should be grated and the second half is to be cut into small cubes for mixing and garnishing at the end. 
  • Now take a clean bowl and whisk the fresh cream and beat it till it turns soft and smooth. Or take a muslin cloth and put the curd into it and squeeze the curd with the help of the cloth in the bowl.
  • Now add the grated pineapple, red chili powder, jeera powder, salt and few chopped coriander leaves and mix it very well in the fine curd.
  • Then transfer it in a serving bowl and top it with few cubed pineapple pieces and pomegranate and garnish with few fresh coriander leaves. 
  • Nor refrigerate the raita for at least 1 hour, and serve it cool ... :)
